Chutney for Your Winter Table
Chutneys are a good way to put up the last of your summer fruits and vegetables. You will be glad you did this winter.

With the last of fall fruits and vegetables coming in, it’s time to prepare your chutneys. Here are some delicious recipes that you will enjoy this winter.
This is a good way to put up the last of those green tomatoes. Put up as much as you want but it’s easier to work with these small batches.
Green Tomato Chuntney
Makes about 5 pints.
Ingredients
- 2 1/2 lbs green tomatoes
- 1 lb.apple
- 2 medium onions
- 4 cups malt vinegar
- 2 cups light brown sugar
- 1 cup golden raisins
- 1 1/2 mustard powder
- 1 tsp. cinnamon
- 1/4 tsp. ground cloves
- 1/4 tsp. cayenne pepper
Method
Quarter tomatoes and place in large pot. Quarter, core and chop the unpeeled apples and add to tomatoes. Chop onions and add to tomato and all other ingredients. Heat gently, stirring until sugar dissolves. Bring to boil and simmer uncovered, stirring occasionally, for one and one half hours until chutney thickens. Pour into warm sterilized jars. Seal immediately.

Windfall Pear Chutney
Makes 5 pints.
Ingredients
- 1 1/2 lb. pears, peeled, chopped and cored
- 1 cup chopped onion
- 3/4 cup raisins
- 1/2 cup chopped apple
- 1/4 chopped stem ginger
- 1/2 cup chopped walnuts
- 1 garlic, chopped
- juice and rind of 1 lemon
- 2 1/2 cups cider vinegar
- 3/4 cup light brown sugar
- 2 cloves
- 1 tsp.salt
Method
Place pears, onions, raisins, apples, ginger, walnuts, garlic and lemon juice and rind in a bowl. Put the vinegar, sugar, cloves and salt into a saucepan. Gently heat, stirring until sugar has dissolved, then bring to boil. boil briefly and pour over fruit. Cover and let sit over night. In large pan, boil gently for one and a half hours until soft and thickened. Spoon into warm sterilized jars and seal.
