Crispy and Delicious Soup Extras

A wonderful tasty addition to Italian style soups. This quantity will serve four but can easily be doubled up for more.
Ingredients
100 g fresh Parmesan cheese
Method
To make the Parmesan crisps, shred the cheese finely. Heat a non-stick frying pan until moderately hot. Sprinkle 1/4 of the cheese in a round of about 10 cm diameter in the pan. Cook until melted and bubbling, then remove the pan from the heat. When the bubbling subsides and the cheese hardens slightly, lift the crisp out with a spatula onto a paper towel. Repeat with the rest of the cheese to make 4 large crisps.
