Cucumber Sambal

A mild sambal with a piquant flavour.

Ingredients

1/2 cucumber(diced finely)

1 medium sized onion(sliced finely)

1 cup white vinegar

2 cloves of garlic(crushed)

11/2 tsp fennel seeds

1 tsp salt

4 tsp sugar

Little oil for sprinkling

Method

  1. Grind sugar,salt,fennel seeds,garlic with  vinegar.
  2. Remove the mixture and add in the onion and cucumber.
  3.  Mix well and allow to rest for at least 4-5 hours before serving.

    I was searching for recipes of cucumber n came across this one. don’t know what sambal means but looks like a way to preserve cucumber.It tastes so good. I used to large cucumbers to make this sambal n finished all of it next day. so yummy can’t resist having it. definitely plan to make more this time.
