Delicious Coconut Rice Named as Thengai Sadham in South India!

Serves: For four people

Time required: 25 minutes for cooking

Ingredients Required:

·         225 to 250 gm of rice, washed nicely

·         45 to 50 ml of oil

·         1/2 tablespoon (2 gm) mustard seeds

·         One tablespoon (5 gm) urad dal

·         6 red chillies, cut into pieces finely

·         Two sprigs curry leaves

·         2 to 3 (100 gm) onions, chopped finely

·         2 green chillies, slit lengthwise

·         One coconut, grated

·         salt to taste

·         50 to 60gm fresh coriander leaves, chopped finely

Method:

·         Firstly boil the rice till three-fourths done and keep it to cool.

·         Than heat oil and season with mustard seeds, urad dal, red chillies and curry leaves. When the mustard seeds start to crackle, add chopped onion and green chillies. Cook for a few minutes and then add grated coconut, reserving a little for garnishing, and saute without letting the mixture turn brown.

·         Add the cooked rice, salt, coriander leaves and toss rapidly.

·         Serve it hot, garnished with freshly grated coconut.
