Easy Roast Potatoes

Better than potato chips, french fries, and baked potatoes combined.
Ingredients
- 3 red potatoes diced
- 4 tblspns vegetable or olive oil
- kosher or sea salt
- cracked black pepper
Method
Lay potatoes out on baking sheet coated with heavy duty aluminum foil. Coat with oil. Jiggle and swirl baking sheet until oil is evenly distributed. Liberally apply salt, and add pepper to your desire. Pop into a 450 degree oven for 15 minutes. Flip potatoes. Cook until done at least 5 more minutes. Times vary widely based on the size of the dice.
