Fried Rice Recipe

A great easy recipe that can be altered by the kinds of leftovers in your fridge.

This is my new go to recipe for a quick dinner or a single meal. I use leftovers for this dish but you can use just about anything to make it unique each time you make it.

For my version, I cook about four pieces of bacon. We use the precooked bacon and cook it in the microwave, but if I used regular bacon, I would cook it in the same pan I use for the entire dish.

I then scramble an egg. Doing so in the same pan as used for cooking the bacon would add additional flavor.

Too the cooked eggs, I add the bacon crumbled and then about a cup of cooked rice. This is where having left over rice from Chinese carry out or dinner the night before is very helpful. Otherwise, cooking rice doesn’t take too long.

This is all I add before seasoning; however, you can add a variety of leftovers. My friend likes to add onions. Her kids ask for it all the time.

I then add soy sauce to taste. I don’t add a lot because I don’t need the added salt content.

I have found this a great way to use up leftovers and make them into an entirely different dish.
