Greens with Pine Nuts

Giving a crunchy new lease of life and complexity of tastes to a vegetable that is a great source of dietary iron but is so often frowned upon as being rather banal.

While; silver beet may not be the most popular of vegetables, this greens with pine nuts recipe breathes new life and palate pleasing tastes into this very nutritious iron rich vegetable.

Ingredients

  • 2 Bunches of Silver Beet
  • 1/3 Cup of Currents
  • 1/3 Cup of Lemon Juice
  • 2 Tablespoons of Toasted Pine Nuts
  • 1 Tablespoon of Olive Oil

Method

  1. Soak the currents in the lemon juice for 5 minutes
  2. Wash silver beet, shake off excess water and then roughly chop the silver beet
  3. Heat the olive oil in a large deep fry pan over a medium heat.
  4. Once oil is up to temperature add the chopped silver beet and while stirring gently cook silver beet until the leaves begin to wilt (around 3 to 4 minutes)
  5. Add the currents and lemon juice mixture and heat through, stirring gently as you do so.

Serving:

Transfer silver beet and currents mixture into a pre-warmed serving bowl, sprinkle with toasted pine nuts and serve. These portions will yield 6 adult-sized servings. Enjoy!
