Holiday Time Fried Yucca with Roma Tomato and Cilantro

A twist on the basic potato, this root can be found fresh year round in the fresh produce aisle near the potatoes. Of course, we all know it’s not the same as a real spud but, the texture and taste of this delectable vegetable could possibly fool the most selective of palates.

This recipe of Fried Yuca can be used a side dish, poured on top of grilled chicken, or even use it on your favorite cut of fish.

Ingredients

  • 8 Yucca root (peeled and sliced into small wedges)
  • 1 to 2 cups cake flour
  • 1 to 1 1/2 cups milk
  • 4 Plum tomato’s chopped
  • 2 tablespoons fresh chopped garlic
  • 1/2 red onion (finely minced)
  • 2 tablespoons Olive oil
  • 1 1/2 tablespoon chopped cilantro
  • 1 teaspoon sea salt
  • 1/2 teaspoon sugar
  • 1 to 2 cups of peanut oil for frying. ( pan fry or deep fry)

Method

  1. Combine the tomato, red onion, cilantro, salt and sugar in a medium bowl.
  2. Set mix to the side.
  3. Coat your yucca with the milk and then dredge with cake flour.
  4. Heat up oil in a deep fryer or deep saute pan and cook yucca until crispy on the outside and tender on the inside.
  5. Let the yucca drain on a paper towel or cheesecloth.
  6. On medium heat, take a saute pan and add the olive oil and saute garlic for about 1 minute.
  7.  Add the tomato mixture and cook for about 3 to 5 minutes until hot.
  8. Remove from heat and add yucca to the pan.
  9. Serve immediately.

    I could try this without Cilantro since I cannot stand that spice.

    Thanks for telling us where to find yucca in the grocery store. I don’t think I’ve ever seen it.

    I have seen Yucca dug up by tribes on Nat Geo, but I didnt know that they could be found in America.
