Hot Potato and Broccoli Vinaigrette

A delicious way to prepare some yummy potatoes and broccoli to eat.

Ingredients

  • 4 medium size potatoes
  • 1 bunch broccoli 
  • 1/2 cup vegetable oil 
  • 1/4 cup cider vinegar
  • 1 clove garlic, minced 
  • 1/2 teaspoon salt
  • 1/2 teaspoon basil
  • 1 to 2 drops of hot pepper sauce 
  • 2 green onions, sliced
  • Cherry tomatoes or tomato wedges

Method

Peel and cut potatoes into 1 inch cubes.  Cook just until tender.  Drain and keep hot.  Trim broccoli and break into small bunches.  Cook until crisp tender.  Drain and keep hot.

In a saucepan, combine oil, vinegar, sald, garlic, basil, pepper sauce, and onions;  bring to a boil, stirring,.  Arrange hot potatoes and broccoli in a servind dish.  Pour hot dressing mixture over and toss to coat.  Add cherry tomatoes and serve warm.
