House Special Fried Rice

A common item on Chinese take-away/take-out menus, House Special Fried Rice makes use of all those little bits of meat and veggies that pile up in the fridge.

Note: Ingredients and amounts are just suggestions. House Special Fried Rice can be made with any combination of rice and add-ins.

Ingredients

  • 2 spring/salad onions, trimmed and minced
  • 1 (or more) cloves garlic, peeled and minced
  • vegetable oil for frying
  • 1/2 c raw peas (frozen are fine, no need to thaw)
  • 1/2 c raw carrots (or any other vegetables), finely diced
  • 2 (or more) c cold cooked white rice
  • 1/2 c Chinese roast pork (cha siu) or other cooked meats
  • 1/2 c  cooked shrimp
  • 2 eggs, beaten
  • soy sauce, freshly ground white pepper
  • dark sesame oil

Method

  1. Heat a couple of tablespoons of oil over high heat in a heavy frying pan or wok. Add the spring onions and garlic. Stir fry briefly to season the oil. Remove the onion and garlic and set aside.
  2. In the seasoned oil, stir fry the peas and vegetables until cooked through. Add the cooked rice and continue to stir fry.
  3. Add the meat(s) and the cooked shrimp and warm through. Push the rice to the edge of the frying pan/wok. Pour the beaten eggs in the centre and scramble them. Stir the rice mixture back into the eggs and mix well. Add back the onion/garlic mixture and stir. Season *lightly* with soy sauce; House Special Fried Rice should never be brown and soggy. Sprinkle a little white pepper and dark sesame oil over the rice.

Serve House Special Fried Rice with Pork and Vegetable Stir Fry, Fried Chicken and Spicy Tofu for a complete meal. Add Lemon Ice Cream for dessert.

    Yes on Chinese fried rice. It’s one of our favourite things from the takeaway!
