This is a recipe on how to make corn on the cob the Mexican way(elote)
First you need 4 ears of corn, fresh or store bought.
1/4 cup of melted butter, unsalted if you like.
1/4 cup of mayonnaise, any kind that you prefer.
1/2 of a cup of grated Mexican cotija cheese (you can choose other cheeses if you prefer other kinds)
*optional* a slice of lime on the corn.
- Preheat an outdoor grill for medium-high heat for about 5 mins.
- Grill corn until hot and lightly charred all over, 7 to 10 minutes, *with skin on* depending on the temperature of the grill. Roll the ears of corn in the melted butter, then spread evenly with mayonnaise. Then sprinkle the amount desired of cheese that you would like. Also you may also want to put some finely grounded red pepper to put on the ear of corn if you want a little spice.

This looks really good.
