How to Make Traditional Latkes for Passover
Make these delicious potato pancakes for the Passover holiday or make them with regular flour for any occasion.

These potato pancakes are traditional for Hannuka, celebrating the Jewish passover. For the non- kosher version, you can substitute the matzoh meal for regular flour and enjoy any time of year.
Ingredients
- 2 large eggs
- 4 large potatoes
- 1 medim onion
- 3 Tablespoons Matzoh meal
- salt and pepper
- 1/2 cup vegetable oil
Method
Grate strips of potato and onion into a colander. Place in sink and squeeze out excess water.
In a bowl, beat eggs by hand; add drained potato and onion, matzoh meal, and lightly sprinkle with salt and pepper. Mix well.
Heat oil in frying pan to medium. Add spoonfuls of potato mixture and flatten each with back of spoon. Fry for 2 or 3 minutes on each side. Drain on paper towels.
Serve warm with applesauce, sour cream, or your favorite pancake topping.

Substitute grated raw zuchini for the potatoes, and you have a less starchy, tasty treat.

I’ve never tried them before, they sound really good, maybe for a lazy brunch some time. And the courgette alternative suggested by Daisy would be great for dinner.
