Mashed Potatoes: Fried

Get your frying pan hot with some oil. Use any oil, Olive oil, Canola or Vegetable is fine. Coat enough for a good fry. 1/4 of a cup or almost a 1/2 cup of oil.
1. Take your left over mashed potatoes and make some patties. Add an egg and some Panko bread crumbs about a 1/4 cup or 1/2 cup depending on the amount of potatoes. Add anything else that sounds good for flavor like, sausage, ham, cooked bacon or cheese so that it binds together.
NOTE: Also make sure your potatoes are cold enough from the night before this will ensure they stick together a little through cold moisture.

2. Mix together about 1/2 to 1 cup of breadcrumbs (Plain or Panko are good can mix both together for a little pizazz to your potatoes.) on a flat plate or flat bowl big enough to dredge the potato patties in.
3. Mix in anything you like such as salt and pepper about 1/2 teaspoon of each to taste. Or mix in anything like garlic powder, Parmesan cheese to taste of course. I also add in a little paprika. Have some fun and use your imagination I try to when cooking.
4. Coat both sides of the potato patty.

5. Set them gently in your hot oiled fry pan (You could throw in a couple of pats of butter with the oil.). Cook for about 2 or 3 minutes on one side and then turn or until you think they are brown enough and holding the potatoes hold together. They should stay together pretty good. They may break a little but for the most part the patty should stay together.
Its tricky but so so good in the end. Enjoy!
NOTE: You might want to make and shape these the night before and cover in plastic over night. It may keep them from falling apart during cooking time.
