Mashed Potatoes with Garlic-Infused Olive Oil

I think this makes a very good snack for dinner time. Please try and leave comments afterwards telling me what you thought.

Ingredients

  • 2lb potatoes (peeled- even sized chunks)
  • 3 fat cloves (halved length ways)
  • 8tbsp good quality extra virgin olive oil
  • salt and freshly milled pepper

Method

Place garlic and olive oil in a small saucepan over a gentle heat for 1 hour (till garlic becomes really soft). When the potatoes are cooked, drain, then using an electric whisk begin to break up using half the garlic and oil. As soon as it is incorporated, add the rest of the garlic and oil. Whisk until smooth. Season well.
