My Top Five Picks for Malay Dishes 4: Fried Rice with Green Beans

Fourth in a six-part series featuring my top five picks for Malay dishes.

Ingredients

  • 2 fresh red chilies, chopped
  • 4 cloves garlic, chopped
  • 3 shallots, chopped
  • ½ tsp dried shrimp paste
  • 2 tbsp oil
  • 7 oz. Medium-sized prawns, with shell and vein removed and diced
  • ½ tsp salt
  • Fresh ground black pepper, to suit your taste
  • ½ tsp sugar
  • ½ cup diced green beans
  • 2 cups cold, cooked rice, broken up with fork to remove clumps

Method

  1. Blend in blender or food processor chilies, garlic, shallots and dried shrimp paste to a paste-like consistency.
  2. Heat 2 tbsp oil in wok and fry paste over medium-low heat, stirring frequently, until the oil surfaces.
  3. Turn heat up to medium. Add prawns, salt, pepper and sugar.
  4. Stir-fry for 3 minutes.
  5. Add green beans and continue to stir-fry for an additional 2 minutes.
  6. Add cold, cooked rice and cook for 5 minutes.
  7. Remove to serving dish and garnish with sliced cucumbers around the edge of serving bowl. Makes 4 servings.
