My Top Five Picks for Malay Dishes 4: Fried Rice with Green Beans
Fourth in a six-part series featuring my top five picks for Malay dishes.

Ingredients
- 2 fresh red chilies, chopped
- 4 cloves garlic, chopped
- 3 shallots, chopped
- ½ tsp dried shrimp paste
- 2 tbsp oil
- 7 oz. Medium-sized prawns, with shell and vein removed and diced
- ½ tsp salt
- Fresh ground black pepper, to suit your taste
- ½ tsp sugar
- ½ cup diced green beans
- 2 cups cold, cooked rice, broken up with fork to remove clumps
Method
- Blend in blender or food processor chilies, garlic, shallots and dried shrimp paste to a paste-like consistency.
- Heat 2 tbsp oil in wok and fry paste over medium-low heat, stirring frequently, until the oil surfaces.
- Turn heat up to medium. Add prawns, salt, pepper and sugar.
- Stir-fry for 3 minutes.
- Add green beans and continue to stir-fry for an additional 2 minutes.
- Add cold, cooked rice and cook for 5 minutes.
- Remove to serving dish and garnish with sliced cucumbers around the edge of serving bowl. Makes 4 servings.
