Ooh Lah Lah Louisiana Dirty Rice

There are probably beaucoups of dirty rice recipes but this one is authentic and delicious, not too time consuming to fix. Delicious served by itself or with additional side dishes.

  A bit of Louisiana trivia:  Here in Louisiana we use what is called “The Trinity” which is simply the combination of bell pepper, onion and celery.  This combination is used in many of the dishes fixed here and you can now buy it in the frozen section of  your grocery store.  Creole and Spanish herbs figure entirely here as well and have become a large influence in French cooking.  Keep handy, as this combination can also be used for soup, stew and sauces.  You will see this used in Chef John Folse’s and Emeril Lagasse’s now world famous recipes!

  Saute’ and lightly brown:

  1 pound lean ground beef

  1 cup chopped pork, chicken or beef liver-optional but this is what gives this recipe the authenticity of flavor

  1 onion-diced

  3-4 cloves garlic, minced

  1 red bell pepper-chopped

  3 ribs celery-sliced

  1 eight ounce can diced tomatoes or tomatoes with green chiles

  A few drops of Louisiana hot sauce

  Cook 2 cups of rice just a bit ahead of time in 2 cups of chicken or beef broth.  Combine cooked ingredients listed above into cooked rice.  Add salt, pepper, onion, garlic powder to taste-the additional powders enhance the flavor of food even though fresh onions and garlic are already in the recipe.  After turning burner off, add chopped parsley and scallions and mix.  The rest of the heat will slightly cook these but you will love the zesty pick up this addition does to this recipe!

    I have never heard of dirty rice, the recipe sounds good, I guess you could do it with quorn instead of beef?

    I’ve read about dirty rice. This doesn’t seem to be difficult to make at all.

    Happy and best new year.
    I’ve come to have to assume that paople who eat quorn are vegans? Wish someone would inform me, but if that is a subsitute for the ground beef you might give it a try. The most thing that gives this recipe it’s great flavor is the liver but the use of spices could make it flavorful-if you give it a try, please let me know. Thanks so much for coming by.
