Philippines: Adobo
A Filipino signature dish.
Have you ever heard of the food adobo from one of your Filipino friends? Or maybe you have tried it. The brown-colored-sauce meat (pork or chicken) dish that tastes so well! Adobo is one of Filipino’s signature recipe. It’s a marinated dish for meat (chicken or pork). A true blooded Filipino surely knows and loves this food.
I’d like to share this recipe to everyone, since you might want to have a taste of what is known to be the signature dish of Filipinos. Or there might be other Filipinos in other countries who missed the taste of adobo, then you’ll have the chance to prepare this. It’s best paired with rice and soda. The basic Adobo recipe.
Ingredients
- 1 head of garlic, minced 1 cup of vinegar
- 1/2 cup of water 1 cup of soy sauce
- 1/2 tablespoon of salt 1/2 teaspoon of black pepper
- 3 pcs. of bay leaves
- 1 kilo of pork or chicken (you can also combine the two meat by having 1/2 kilo for each and have it cut into pieces)
Procedure
- Saute the minced garlic together with the meat, set the pan into low heat.
- Add the water, soy sauce and vinegar while stirring, so the meat will not stick to the pan.
- Sprinkle salt and pepper and put the bay leaves.
- Bring it to boil and simmer until the meat turned brown and tender. This might take some time, you can turn up the heat to take less time. Or it takes about an hour if you maintain it on a low heat, it will give more flavor to your recipe.
- You can top it off with garlic flakes, to add drama and presentation to your adobo.

Chicken Pork Adobo is my personal favorite. I really like it garlic fried rice. Yummy!

Gone are my adobo days since I turned vegetarian but it won’t hurt to have a small serving.
