Quick and Easy Recipe: Pan-fried Noodles

Fast and easy to prepare, a tasty low-budget meal for those who are in a hurry.

For those of you who are living within a budget, don’t have time to make gourmet meals, or are looking for a fast, delicious meal, egg-fried noodles is for you. The amounts used in this recipe are for a single adult serving. For a child, use half of the amount given here.

Ingredients (for one serving):

  • 150g Noodles
  • 2 Eggs
  • 1 Carrot
  • 80g Green beans

During college when I had a small food budget, I used 2-minute noodles, but any thin noodle will work well. These days I use a thin wheat noodle that I buy from an Asian food store in my area.

Method:

  1. Beat eggs in a bowl. (Do not add milk)
  2. Dice the carrots and chop the beans finely. Individual pieces should be 3-5mm.
  3. Pour two tablespoons of oil into a large frying pan. Bring the pan to a nearly-searing heat.
  4. Boil noodles in a separate pot, adding some chicken stock or salt to flavor.
  5. Quickly fry the beans and carrots. Before they are fully cooked, add the egg mixture and fry as though making scrambled eggs.
  6. Once the noodles are ready, drain off the excess water and add to the egg and vegetables in the pan.
  7. Add another tablespoon of oil, or a dab of butter.
  8. Salt, pepper and soya sauce to taste.

Extra additions:

Egg-fried noodles works especially well as a base for meat, chicken, tofu and vegetable stir-fries.

Pan-seared steak sliced into small pieces is delicious with egg-fried noodles. Add a bit of chilli to create a warm and hearty meal.

You may enjoy adding onions or spring onions to this recipe, frying them quickly with the other vegetables.
