Rice and Cheese Casserole

Rice and Cheese Casserole is a favorite due to its versatility. This recipe can be halved to use up some leftover rice or doubled (or more) to feed a crowd. Any cooked meat, beans, or vegetable can also be added. It is great way to use up leftovers.

2 cups cooked rice

1 1/2 cups sour cream

1/2 cup salsa (your choice according to your taste)

1 cup shredded Monterey Jack cheese

1 cup shredded Cheddar cheese

Combine all ingredients except Cheddar cheese.  Pour into greased baking dish.  Top with Cheddar cheese.  Cover and bake at 350 degrees for 35-40 minutes or until hot and cheese is melted.
