Roasted Baby Potatoes
Roasted potatoes with garlic.
Ingredients:
- 15-20 Baby Potatoes
- 1/2 White Onion
- 3 Tablespoons of diced chives (fresh or dehydrated)
- 1/4 Cup of Olive Oil
- 2 Cloves of garlic
- 1 Teaspoon each of Parsley, Oregano, Sage, Onion Powder and Garlic Powder
Methods:
Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil for easy clean-up. Slice the potatoes as thinly as possible — going for potato chip like width. Dice the onion and place into a big bowl with the potatoes. Using a small grater, grate the garlic cloves into the potatoes and onions. Add the rest of the ingredients ensuring that all of the potatoes are coated. Spread the mixture onto the baking sheet with as evenly as you can. Bake for 30 minutes. Flip the potatoes over to cook the other side. Bake for an additional 30 minutes. Bake longer if you desire “crispy” potatoes and enjoy!
Variation: Can add mushrooms or parmesean cheese for a change.
