Roasted Tomatoes

Roasting tomatoes gives a intense taste and flavor to tomatoes. You can use the roasted tomatoes for pizza toppings and sand witches. Chopped roasted tomatoes can be mixed with curd to make a dip or salsa. It can be used as side dish for meals.

Ingredients

  • 4 or 5 medium size tomatoes cut into halves
  • 5 garlic gloves sliced
  • 1 teaspoon of dried thyme
  • ½ teaspoon of sugar
  • Pinch of salt
  • 2 tablespoons of olive oil

Method

  1. Place the tomatoes with cut side facing up in a microwave-proof dish in a single layer.
  2. Spread garlic slices, thyme, sugar and salt evenly over the tomatoes.
  3. Finally trickle olive oil over the tomatoes.
  4. Now you have to place to dish inside the microwave oven on High heat for 7 to 8 minutes.
  5. Now roast the tomatoes further in a microwave oven (preferable convection oven) at 200 degree Celsius for 10 to 15 minutes till the tomatoes turn reddish brown.
  6. Now keep it aside for 3-4 minutes and serve warm.
