Roasted Tomatoes
Roasting tomatoes gives a intense taste and flavor to tomatoes. You can use the roasted tomatoes for pizza toppings and sand witches. Chopped roasted tomatoes can be mixed with curd to make a dip or salsa. It can be used as side dish for meals.

Ingredients
- 4 or 5 medium size tomatoes cut into halves
- 5 garlic gloves sliced
- 1 teaspoon of dried thyme
- ½ teaspoon of sugar
- Pinch of salt
- 2 tablespoons of olive oil
Method
- Place the tomatoes with cut side facing up in a microwave-proof dish in a single layer.
- Spread garlic slices, thyme, sugar and salt evenly over the tomatoes.
- Finally trickle olive oil over the tomatoes.
- Now you have to place to dish inside the microwave oven on High heat for 7 to 8 minutes.
- Now roast the tomatoes further in a microwave oven (preferable convection oven) at 200 degree Celsius for 10 to 15 minutes till the tomatoes turn reddish brown.
- Now keep it aside for 3-4 minutes and serve warm.
