Apple Salsa

Rather than serving pork with the standard issue apple sauce try this great apple salsa instead.

Ingredients:

  • ¼ Cup of Extra Virgin Olive Oil
  • 2 Red Apples
  • 2 Green Apples
  • 1 Small Red Onion
  • 2 Tablespoons of Shredded Mint Leaves
  • 2 Tablespoons of White Balsamic Vinegar
  • 2 Tablespoons of Dijon Mustard
  • Salt Flakes (for seasoning)
  • Freshly Ground Black Pepper (for seasoning)

Method:

  1. Peel and finely chop the onion
  2. Cut the apples into quarters, remove the cores and then dice and put the apples into a medium sized bowl
  3. Add the chopped onion and toss until well combined
  4. Into another bowl or jug add the olive oil, the white balsamic vinegar, the shredded mint leaves and the Dijon mustard and whisk until combined
  5. Add oil and mint dressing to salsa immediately prior to serving and enjoy

Serving: Serves 6

Apple salsa is great in partnership with most pork dishes, especially pork chops
