Apple Salsa

Rather than serving pork with the standard issue apple sauce try this great apple salsa instead.
Ingredients:
- ¼ Cup of Extra Virgin Olive Oil
- 2 Red Apples
- 2 Green Apples
- 1 Small Red Onion
- 2 Tablespoons of Shredded Mint Leaves
- 2 Tablespoons of White Balsamic Vinegar
- 2 Tablespoons of Dijon Mustard
- Salt Flakes (for seasoning)
- Freshly Ground Black Pepper (for seasoning)

Method:
- Peel and finely chop the onion
- Cut the apples into quarters, remove the cores and then dice and put the apples into a medium sized bowl
- Add the chopped onion and toss until well combined
- Into another bowl or jug add the olive oil, the white balsamic vinegar, the shredded mint leaves and the Dijon mustard and whisk until combined
- Add oil and mint dressing to salsa immediately prior to serving and enjoy
Serving: Serves 6
Apple salsa is great in partnership with most pork dishes, especially pork chops
