BBQ Sauce, Memphis and North Carolina Hybrid

Recipe for a quick and easy BBQ sauce.

I generally detest most off the shelf BBQ sauces as they are all too sweet and thick for my tasting.  Also, I like different sauces for different purposes.  Sweet Memphis for ribs and a vinegar based North Carolina for pulled pork.  I never knew how easy it was to create my own until I threw caution to the wind one day and just did it.  I hope you like the results.

Results equal 1 cup sauce

Ingredients

  • 1 cup Apple Cider Vinegar
  • 3/4 cup Ketchup
  • 1/4 cup Brown Sugar
  • 1/4 teaspoon Worcestershire Sauce
  • 1/4 teaspoon Liquid Smoke
  • 1/8 teaspoon Tabasco Sauce (few shakes)
  • 1/8 teaspoon Cayenne Pepper (few shakes)
  • **optional** Honey to taste if added sweetness is desired

Method

  1. Combine all ingredients in small sauce pan and bring to boil.  Reduce to medium/low and simmer for approximately 10 minutes reducing the sauce by one third.  Whisk occasionally to fully integrate and dissolve the ketchup.
  2. That’s it, transfer to a liquid container and use to marinate, dip, or add to any dish you would normally use BBQ sauce for.  The sauce is thinner than Memphis but thicker than North Carolina, spicy with a nice sweet finishing.  Alter to your own tastes and enjoy.
