Butter Meltaways

Butter meltaways are a fast and simple treat from palate heaven to make and savor.

Butter Meltaways Ingredients:

  • 2¼ Cups (335g) of Sifted Plain Flour
  • ½ Cup (125g) of Softened Butter
  • ½ Cup (115g) of Caster Sugar
  • ½ Cup (125ml) of Canola Oil
  • ½ Cup (60g) of Confectioners’ Sugar
  • 1 Egg
  • ½ Teaspoon of Vanilla Extract
  • ½ Teaspoon of Bicarbonate of Soda
  • ½ Teaspoon of Cream of Tartar
  • Additional Confectioners’ Sugar (optional for dusting)

Method:

  1. Into a large mixing bowl add the butter, canola oil, caster sugar and confectioners’ sugar and cream until light and fluffy
  2. Beat in the egg and vanilla extract
  3. In another mixing bowl thoroughly combine the flour, bicarbonate of soda and cream of tartar
  4. Gradually add the thoroughly combined dry ingredients to the creamed mixture and mix well
  5. Place into refrigerator to chill for several hours or overnight
  6. Preheat oven to 1800C
  7. Drop rounded teaspoons of refrigerated butter meltaways dough approximately 5cm apart onto non-greased baking trays
  8. Use a fork dipped in flour to flatten butter meltaways
  9. Sprinkle flattened butter meltaways with confectioners’ sugar
  10. Place in preheated oven and bake for 15 minutes or until lightly browned.
  11. Once cooked remove from oven and transfer to wire racks to cool
  12. Once cooled dust with confectioners’ sugar if you so desire

These portions will yield around 4 dozen dreamy Butter Meltaways
