You will also need a tin of chopped tomatoes 2 medium sized onions along with your choice of Chicken, meat, fish or prawns.

Method

  1. Slice the onion and fry gently in oil with a pinch of salt until they start to go transparent
  2. Add finely chopped Garlic and Ginger and stir in again wait for 1 minute
  3. Now start to add approximately 1 teaspoon of each of the above spices (not the salt as already added at the start with the onions and keep fresh coriander until the end)
  4. Stir until the onions and spices are combined add your small cubes of meat/chicken and wait for them to start to color and take in the spices
  5. Now add 1/2 of your tomato tin and leave to simmer
  6. If cooking with lamb then you should let it cook for longer, for chicken 45 minutes should be enough
  7. Now chop up your fresh coriander finely and sprinkle over the top

For that something special to your Lamb dish add Cardamom pods about 4 some cloves and a star anise to stage one of the cooking process, and try to remove them before serving.

You can also add vegetables after the meat has started to cook such as carrots, potatoes, mushrooms and peppers. What ever takes your fancy
