Easy Dip Recipes for Skewers

Each skewer dip recipe makes one cup and can be used as a dip or sauce for other foods too.
Red Pepper Mayonnaise Skewer Dip
½ cup of roasted red pepper, coarsely chopped
1 small clove of garlic
1 teaspoon red wine vinegar
½ cup mayonnaise, regular or light
Place dip ingredients in a food processor and pulse until desired consistency.
Curry Yogurt Skewer Dip
½ cup of Greek yogurt
½ cup of mango chutney
2 teaspoons of curry powder
Place dip ingredients in a food processor and pulse until desired consistency.
Cilantro Chimichurri Skewer Dip
1 cup of packed, fresh cilantro leaves
3 cloves of garlic
Pulse these two ingredients in a food processor until finely chopped then add-
½ cup of olive oil
3 tablespoons of water and lime juice
3 tablespoons of lime juice
1 teaspoon of crushed red pepper flakes
½ teaspoon of salt
Pulse until well blended.
Asian Soy-Orange Skewer Dip
In a mixing bowl, place
½ cup of soy sauce
1 teaspoon of grated orange zest
2 teaspoons of grated ginger
1 tablespoon of rice wine vinegar
3 tablespoons of water
3 tablespoons of dark brown sugar
Whisk until the sugar dissolves
Thai Skewer Dip
In a mixing bowl whisk together
½ cup of cream of coconut
2 tablespoons of creamy peanut butter
2 tablespoons of lime juice
1 teaspoon of jalapeno hot sauce
After dip ingredients are whisked, stir in 1 tablespoon of chopped jalapeno pepper if desired.
All skewer dip recipes can be made ahead of time, covered and refrigerated until needed. Dips will keep for several days when properly stored.
