Fish Stock

This flavorful stock can be used in gravies,soups, or sauteed dishes.

 Ingredients 

  • 3 pounds fish heads and bones
  • 1 quartered onion
  • 1 whole carrot
  • 2 leeks cut up
  • 1 bunch parsley
  • 2 bay leaf
  • 2 cup white wine
  • 1 teaspoon black peppercorns
  • 1 teaspoon ground thyme

Method

Place all ingredients in a pot, and cover with water by at least one inch. Bring to a boil , skimming off the foam on top. Add the white wine, reduce heat , leave to simmer for one hour. Let stand for ten minutes, then strain.
