Golden Butter Rum Sauce

published by Jo Oliver on Feb 27, 2009

This rich sauce is great on seafood dishes like sauteed shrimp and scallops. This will yield about 1/3 of a cup of sauce. It is a fast and easy way to turn a bland meal into something your family is sure you have had catered!

Ingredients:

  • ½ tsp kosher salt
  • 1/3 tsp of pepper
  • 1 tsp of honey
  • 3 Tbsp of unsalted butter
  • 1 shallot or onion, minced finely
  • 1 clove of garlic, minced finely
  • 2 Tbsp of dark rum
  • 2 Tbsp of freshly squeezed orange juice
  • 2 Tbsp of freshly squeezed lemon juice

Method

In a small pan, melt 1 Tbsp of butter over medium heat. Stir in the shallot and garlic. Cook for 5 minutes or till just tender. Turn heat to low. Whisk in rum, lemon juice, orange juice, honey, salt, pepper, and remaining butter. Let simmer for five minutes over very low heat.
