Green Tomatillo Sauce

This subtly flavored, thick meat sauce is quite simple to make if you can find the necessary canned tomatillos (small, sweet green tomatoes). Don’t try to substitute ordinary green tomatoes, they do not have the proper sweet, mild taste.

Ingredients

  • 1 medium sized onion, finely chopped
  • 1/4 cup finely chopped blanched almonds
  • 2 Tbsp. salad oil
  • 2 cans tomatillos (10 oz. each)
  • 1 Tbsp. minced cilantro (also called Chinese parsley or fresh coriander) or 1 tsp. ground coriander seed
  • 3 Tbsp. minced canned green chilies, seeded, or less according to chili flavor desired
  • 2 cups regular strength chicken broth

Method

Combine the onion, almonds and oil in a saucepan and cook, stirring, over moderate heat until onion is soft and almonds are lightly browned. Whirl the tomatillos and their liquid in a blender until mixture is fairly smooth (or rub through a wire strainer, using all liquid and pulp); add to onions. Stir in the coriander and chilies, a little at a time; taste to determine how much of the chili you want. The sauce should be fairly mild. Add the chicken broth and simmer rapidly, uncovered, until reduced to 1-1/2 cups; stir occationally. You can cover sauce and chill as long as several days.

    Why tomatillos from a can? Fresh is always better isn’t it?

    Yes, this is true and I for one love to cook enough to take the time to prepare them but others may not. For those who have the desire and the time will take the necessary steps. Thank you for your comment.
