Homade Adobo Sauce
The sauce can be used with a variety of meats to include pork, beef, chicken, and shrimp. In addition, it can be mix with fry veggies to make a decent vegetarian dish.
Ingredients
- 3 large chipotle peppers
- 1 dried Pasilla chilis
- 1/4 cup of peanut, or olive oil
- 1/4 cup of distilled white vinegar
- 2 onions
- 2 cloves chopped garlic
- 1/2 tsp dried Oregano
- 1/4 tsp ground cumin
- 1/2 tsp black pepper
- 1 1/2 tsp sugar

Method
First, soak the chipotle and pasilla chiles in hot water for ten to fifteen minutes. After the peppers and chillies are finished soaking, drain about three quarters of the water from them mixture. Next, add all of the other ingredients except for the oil, vinegar, and sugar. Puree the ingredients by using a hand blender. Once they have been blended together nicely, pour them into a pan along with the oil and allow them to fry for two to three minutes. Once they have spent some time frying, add the vinegar and sugar into the mixture. Heat the mixture up to a boil once all ingredients have been added. Once a boil has been acheived, reduce the heat and simmer until your sauce has reach the consistency that you desire for your meal.
