Homemade Green Curry Paste

Curry’s are in a class entirely on their own. You can purchase ready-made curry’s at the market but, nothing compares to the fresh, spicy flavors of Eastern cultures like a handmade recipe.

“Curry is described as any spicy dish from the regions of India, Bangladeshi, Sri Lankan, Nepali, Indonesian, Malaysian, Thai, and other South Asian and Southeast Asian cuisines, though curry has been adopted into all of the mainstream cuisines of the Asia-Pacific region. Along with tea, curry is one of the few dishes or drinks that is truly “Pan-Asian“.”

Ingredients:

  • 15 to 20 Thai green chili peppers
  • 2 stalks lemon grass chopped
  • 3 shallots thinly sliced
  • 1 clove garlic chopped
  • 1 tbsp chopped Kha
  • 1 tbsp chopped Kaffir lime
  • 1/2 tsp coriander
  • 1/2 tsp caraway seed
  • 1/2 tsp fish sauce
  • 1 tbsp sugar
  • 1/2 tsp shrimp paste(optional)
  • 2 tbsp oil

Method

Use a mortar and pestle to blend all of the ingredients

Uses

Best used in seafood and chicken recipes.

    What do you do with all the Green Curry Paste that you don’t use? I can keep going on a batch for ages. If made well it’s really a light and aromatic curry -I lived on it in Thailand.

    I use it in everything. I am the Unorthodox chef and I can make a masterpiece out of anything, if I set my mind to it. Years of training and creativity.

    I enjoy Indian food and this one in particular is very interesting. I would have to find out where to buy some of the ingredients first…I never heard of Kha or Kaffir lime. I don’t own a mortar and pestle either..maybe I can borrow one from the corner druggist.

    I am bookmarking the recipe. It may take a while before I get around to trying my hand at Green Curry Paste but I intend to give it a go.
