Hummus

A delightful starter that is delicious and healthy.

Ingredients

1 1/4 cup chick peas (soak overnight)

1 onion sliced

2 cloves garlic, crushed

2 lemons

4 tablespoons tahini paste

3 tablespoon olive oil

salt and pepper to taste

cilantro for garnish (optional)

Method

  1. Place chick peas and onion in a large saucepan with plenty of water and bring to a boil. Continue to simmer for about 2 hours or until chick peas are tender.
  2. Drain and reserve some of the liquid for later. Make sure to discard the onion.
  3. In a blender add the garlic, the juice of the 2 lemons, tahini, olive oil, chick peas, salt and pepper. Blend all the ingredients into a smooth paste.
  4. If the paste is too thick add some of the reserved cooking liquid. Empty the humus into a serving dish and garnish with cilantro if desired. Can be served with pita bread.
