published by senoritakazza on Feb 18, 2009

A versatile sauce that can be used as the base for lots of different dishes – it is so simple and so quick you won’t believe it. No need to buy sauces in a jar that are full of fat, salt and sugar – just add meat, fish, pasta or vegetables, it can even be used a soup.

Ingredients

1 Tin of chopped tomatoes

Garlic (1 clove or more depending on your personal taste)

Fresh Basil (chopped)

1 Red Onion

1 Courgette (sliced)

4 Cherry Tomatoes (halved)

Dash of Worcestershire Sauce

Preparation

Place a teaspoon of oil in a medium saucepan and heat then put in the chopped garlic and onions.

Place the chopped basil, courgettes and cherry tomatoes into the pan with the garlic and onion together with the dash of worcestershire sauce.  Fry off until the tomatoes are breaking up a little.

Tip the can of tomatoes (including the juice) into the pan with the other ingredients and heat through.

The sauce is now ready for use.  It can be used to flavour soups and casseroles, put with minced beef, chicken or pork – the list is endless!

Enjoy!
