Making Mayonnaise

Even though many homemakers consider mayonnaise hard to make, it is easy to prepare delicious mayonnaise by simply following directions.

Remember that the most important thing is to add the oil to the egg liquid mixture very slowly at first, no more than a teaspoon at a time.

Basic Mayonnaise:

Ingredients

  • 2 egg yolks
  • 2 tablespoons vinegar
  • 2 cups salad oil
  • 2 tablespoons lemon juice
  • 1 tablespoon hot water
  • 1 teaspoon salt
  • ½ teaspoon dry mustard
  • ¼ teaspoon paprika
  • Dash cayenne pepper

Method

  1. In a mixer boil mix salt, dry mustard, paprika, and cayenne pepper.
  2. Blend in the egg yolks.
  3. Add the vinegar and mix well.
  4. Beating with a mixer, slowly add ¼ cup of salad oil (1 teaspoon at a time).
  5. Add 1 ¾ cups salad oil in increasing amounts, alternating the last ½ cup oil with lemon juice.
  6. Beat in the hot water.

This makes 2 cups of mayonnaise.

Hint

Occasionally mayonnaise fails to form an emulsion and you end up with a separated mixture. If this happens, restore the mayonnaise by very slowly beating the separated mixture into an egg yolk. This remedy will not work if you mistakenly beat the egg yolk into the separated mayonnaise mixture.

    I used to watch my aunt make mayonaise, but I have never done it myself. Looks interesting to try.
