Mint and Spinach Chutney Recipe

The perfect chutney to accompany any Indian dish.
Serves four – six.
Ingredients
55g tender fresh spinach leaves
3 tbsp fresh mint leaves
2 tbsp chopped fresh coriander leaves
1 small red onion, roughly chopped
1 small garlic clove, chopped
1 fresh green chilli, chopped (deseeded if you like)
2 ½ tsp granulated sugar
1 tbsp tamarind juice or juice of ½ lemon
Method
1) Put all the ingredients in a blender or food processor and blend until smooth, adding a little water to enable the blades to move, if necessary.
2) Transfer to a serving bowl, cover and chill in the refrigerator for at least 30 minutes before serving.
