Spiced Carrots

New ways to prepare and serve that trusty old favorite, the carrot.

Here is a great way to add some spice and new flavors to a well-loved vegetable. Steam cooking the carrots means that all the goodness will still be in the carrots when you get around to eating them but let’s face it; steamed carrots day in, day out does get a bit tedious. Here are some ways in which you can easily do something about that.

Ingredients

  • 4 Medium Carrots
  • 30 Grams of Butter
  • 1 Teaspoon of Cumin Seeds
  • 1 Teaspoon of Sugar
  • 1 Pinch of Ground Cayenne Pepper

Method

  1. Peel and cut carrots into slices
  2. Steam carrots over boiling water until tender
  3. Melt the butter in frying pan
  4. Add cumin seeds and cook to lightly toast (about 90 seconds)
  5. Now add a pinch of cayenne pepper and give a quick stir
  6. Add the steamed carrots and toss to coat the carrots with the spice mixture
  7. Transfer spice coated carrots to pre-warmed serving bowl and serve

Serving:

These portions will yield 6 Adult servings of spiced carrots which can be eaten alone or as a side dish with other vegetables as well as with most main courses. Also taste great served cold so you might want to include them in a salad or as a cold lunch. They do reheat very well in the microwave for those who like to nuke their food. Do enjoy!
