Chipotle Mayonnaise

Looking for a great way to spice up some mayonnaise? Then give this simple chipotle mayonnaise a go. I guaranteed you’ll be pleased.

Let’s add a little spice and flavor to some mayonnaise and let’s face it with everybody dishing out the mayo like it’s going out of style sometimes a new twist on the standard mayonnaise theme is required if you hope to avoid that banal aspect.

Ingredients

  • 3 Cups of Mayonnaise
  • 7 Ounces (1 can) of Chipotles En Adobo
  • 1 White Onion
  • 1 Garlic Clove
  • 1 Bunch Fresh Cilantro
  • 1 Lime

Method

  1. Wash the cilantro and peel and chop the onion do likewise with the garlic clove
  2. Keep zest of 1/8 of the lime and extract the lime juice from the remainder
  3. Add the chopped onion, chopped garlic, lime zest, lime juice, the cilantro and the chipotles en adobo to your mixing bowl and combine very well. You can use your food processor to speed this up if you like.
  4. Transfer the well combined chipotle mixture to a non-reactive bowl
  5. Gradually fold in the 3 cups of mayonnaise 1 tablespoon full at a time until you have used all 3 cups of mayonnaise

Serving

Can be served as a dip or used as a spread with other dishes. Anything that has lettuce in it will benefit from a chipotle mayonnaise and do enjoy!!!

    Sounds yummy! I like spicy foods. This would work for low carb diets. I will try it as a dip with my pork rinds!

    I don’t like mayo, but my family does. I will share your recipe with them. I know they will eat it up

    I made this and it tastes pretty good. A “bunch” of cilantro may vary depending on where you are – if I would have used the whole bunch it would have been 3-4 cups of chopped cilantro..! I would say 3/4 cup of chopped cilantro suffices (for my tastes anyhow).
