Crock Pot Enchilada

It’s a great Mexican dish!

Ingredients

5 pounds ground beef
1 pkg. enchilada seasoning
1/2 diced onion
6-9 white corn tortilla shells
1 tub of sour cream
3 pkgs. of shreded three cheese
1 can of red enchilata sauce
1 can refried beans

Directions

First, brown and drain beef, adding refried beans, onion, enchilada sauce, and enchilada seasoning. Next, get your crock pot heated up and place a scoop of the meat mix onto the bottom of crock pot. Next, place three corn tortillas in a circle, and spread some sour cream on them. Then, apply some shredded cheese and start layering all of this until all the meat mix is used up. Next, put the lid on and let cook for 15 to 20 minutes until all is warmed all the way through. When serving your guests, you may want extra cheese or some sour cream to top. Enjoy!
