Decadent and Delicious Rich Moist Carrot Cake

This easy cake is unbelievably good!

In a large mixing bowl (I use a stand mixer), mix:

2 cups sugar

4 eggs

1 1/2 cups oil

2 cups flour

1 tsp salt

1 tsp soda

3 tsp cinnamon

3 cups shredded carrots

1/2 cups walnuts

Bake at 350 for 1 hour.

When completely cooled, frost with cream cheese frosting (see recipe below):

1pkg.  (8 oz.) Cream Cheese, softened1/4cup  butter or margarine, softened1tsp.  vanilla1pkg.  (16 oz.) box powdered sugar
