PREPARATION TIME: 5 MINUTES SERVES 4
2 x 41 Og cans chickpeas, drained and rinsed
juice 2 lemons
1 garlic clove, crushed
4tbsp light tahini paste
4tbsp olive oil
toasted caraway seeds and paprika, to serve
Simply whiz the chickpeas, lemons, garlic, tahini and oil in a blender
until roughly mixed. Add 4tbsp cold water, then whiz again until
smooth. Season well and serve as a dip or as a filling for a jacket
potato, sprinkled with the caraway seeds and paprika.
