My Twice Baked Potatoes
I love potatoes in any form but baked potatoes are one of my favorites. This recipe is so good there is no need to add anything when you sit down to eat them:)
Ingredients:

4 Large Russet Potatoes
3oz Philadephia Cream Cheese, softened
3 tbsp butter
1/2 cup parmesan cheese
2 tbsp sour cream
1 tsp fresh chives, minced
1/2 tsp salt
pepper to taste
additional parmesan cheese for garnish
Directions:
Scrub potatoes well, rub down with butter and pierce with a fork a couple of times. Bake for 1 hour or until fork tender in a 400F oven. Allow potatoes to cool and then cut the potatoes lengthwise and scoop out potato & put in a bowl. Add remaining ingredients and beat well. Fill potato shells; sprinkle with additional cheese and bake at 375° until lightly browned. Serves 4
