Party Spread

Serve with crackers or spread on bread as open-face sandwiches.

Ingredients

 

1 (8 oz.) pkg. cream cheese, softened

mayonnaise (enough to blend ingredients together)

1/4 c. celery, finely chopped

3/4 c. carrots, finely grated

1 small onion, finely chopped

1/4 c. bell pepper, finely chopped

1/4 c. cucumber, finely grated

 

Method

 

Squeeze all the juice from cucumber. Blend all the ingredients together. Stir in the mayonnaise, adding more if needed. Refrigerate in an air-tight container until ready to serve.

    This sounds good except for the onions and peppers. I don’t eat either one, but the rest of it sounds yummy.
