Pulihaara Paste

A famous recipe of Andhra Pradesh, which is prepared for the festivals in the houses and as Prasaadam at the Temples. And also very choosable recipe for the journeys because it will not spoil for two days if you prepare it correctly. And anybody can prepare this paste and store it in the refrigirator for any lenght of time.

Ingredients :——  

1.  big lemon sized ….Tamarind
2.  Bengalgram……….2 spoons.
3. idlee dal……..1 spoon.
4. ginger…..1 inch piece
5. mustard seeds…….2 spoons
6. red chillies……10
7. green chillies……15
8. curry leaves…..a handful

              a.  Take tamarind and soak it in a big glass of water. 
              b.  remove the skin of ginger and cut it into small pieces.
              c.  cut the green chillies into two straight pieces.
              d.  cut the red chillies into 2 pieces.
    
  

              Now keep the vessel on the stove with low flame , pour some 8 spoons of oil and put bengalgram,udud dal,ginger pieces, green chillies pieces,red chillies pieces, 1 spoon mustard seeds, curry leaves  into the oil and fry gently till the nice smell comes. Then take the soaked tamarind and squeeze it till the nice paste comes, add that tamarind paste to all the ingredients on the stove. again add a little water to the tamarind and squeeze the paste from it and then pour it in the vessel on the stove. can take once more the tamarind paste by pouring a little water in the leftover tamarind. Throw away the remains of tamarind. Then mix everything in the kadai and add some salt and haldi powder to it. half close the vessel and let it  be cooked until the paste becomes thick.
      Whenever you want to prepare Pulihara, cook some required rice in the cooker. Remove the rice from cooker and transfer it into a wide opened vessel. at this point you take other 1 spoon of mustard seeds and make it as paste with a little water. now you keep this paste, some haldi powder, some curry leaves and some oil in the middle of the rice and cover them with hot rice for some time and then mix completely until full rice becomes yellow colour. 
      Then take some tamarind paste and mix it with rice, after mixing thoroughly taste the rice for salt and tamarind, if not enough, take some salt and mix it in the tamarind paste and the mix in the rice. you can fry groundnuts
or cashew nuts in ghee and add to pulihara for taste.
