Super Bowl 2011 a Quick Appetizer Idea List for Potluck Parties

Going to a party? Tired of being known for taking the pizza rolls? Here are some quick and just as easy ideas!

I love Super Bowl and the parties are the best.  I love the commercials and the socializing.  I love appetizers and often, when attending a casual style party, guests bring appetizers to share.  While pizza rolls and those frozen bagel pizzas are an option, here are some others to keep you on the “invite” list for next year.

Cream Cheese is your friend. Cream Cheese.  You buy this in a “brick” and oh, the things you can do with this. Here are two quick Cream Cheese ideas.

Use your creativity when thinking about toppings. Here are two that are all time favorites. Remember, hot tips are that you should unwrap and smooth out the package marks from your brick and please place the brick on a fun and/colorful plate.

1. Cream Cheese with Jalapeno Jelly.  Easy.  Place the Brick flat on the plate and top with a small jar of store purchased jalapeno jelly. Please also always provide an attractive “spreader” knife.  Everyone loves this.  Provide crackers and this will be a hit for sure!

2. Cream Cheese with caviar. You will become known as the appetizer making extraordinaire.  Place brick on plate and top with small jar (it can be low dollar. Your local super market carries this for about 5.00) of caviar. Your friends and colleagues will think they are partying with Martha Stewart.

Another favorite is homemade Super Bowl Cheese spread.  Don’t let the word homemade scare you.

3. Homemade Super Bowl Cheese Spread

1. 1 8 oz. bag of shredded sharp cheddar cheese

2. 1/2 cup Hellman’s Mayonnaise

3. 1/4 Cup green olives with pimientos (Cut to very small pieces or place in food chopper)

4. 1/4 Cup (Cut to very small pieces or place in food chopper)

Mix in bowl 8 hours before serving.  Transfer to a nice decorative bowl and serve with crackers.  Everyone will love it. Especially your spicy food lovers.

BLT Biscuit Bites

I make these sometimes for brunch but football games are a good excuse to bring out the bacon!

BLT Biscuit Bites

You will need a mini muffin pan.  Along with:

1. Canned Biscuits

2. 3/4 Cup Shredded cheddar cheese

3. 1/2 cup of favorite Salsa

4. 1/4 cup Favorite Mayonnaise

5. 4 pieces of cooked Bacon, then crumbled

Spray the muffin pan with non stick spray.  Cut each biscuit in 1/2 and loosely drop into muffin tin. A can of biscuits should yield about 24 minis.

Mix in a bowl the cheese, salsa mayo and bacon.  Spoon a tsp of mixture on top of each un baked biscuit.  Cook biscuits for 8=10 minutes until dough is cooked.  Remove from oven.  These are good warm or even cooled.  Yum!  Get ready to fall in love!

    These sound like great appetizers. I really like the recipe for the BLT Biscuit Bites. I would leave out the salsa, but the rest sound good.
