Turkey French Toast Appetizers

These are great as a brunch meal when you are having friends over.

1 cup minced, cooked turkey

1 Tablespoon sweet pickle relish

1/4 cup chopped celery

1/4 cup mayonnaise

12 slices bread

3 eggs slightly beaten

3/4 cup milk

1 teaspoon sugar

margarine

Combine turkey, relish, celery and mayonnaise. Spread on 6 slices of bread, top with other six slices. Beat eggs, milk and sugar together. Melt margarine on a griddle or in an electric frying pan. 

Dip sandwiches in mixture and fry until golden. Cut into 24 squares. If you have big eaters at your house or brunch or potluck, make a double recipe the same way.
