Toasted Marshmallow and Pecan Sweet Potatoes

Yummy, fluffy and sweet! A perfect side to any meal!

            These sweet delights will make your family beg for them year round. They are moist, sweet but not too sweet to be enjoyed and they are sinfully easy to make.

Ingredients:

  • 6 large peeled sweet potatoes
  • 1 cup of skim milk
  • ½ cup of halved pecans
  • 1 bag marshmallows
  • ¼ cup Orange Juice
  • 1 tbs nutmeg
  • 1 tbs Saigon cinnamon
  • ¼ cup brown sugar
  • 4 tbs tupelo honey
  • Salt
  • Pepper

Preparation:

            In a large pot boil the sweet potatoes for 10 minutes then drain. In a small saucepan bring milk, O.J., sugar, honey, and spice to a boil, then add it to the sweet potatoes and let boil in the milk for 10 minutes or until soft. Then proceed to mash them. Once mashed place in a heat resistant bowl in layers of  sweet potatoes followed by pecans & marshmallows. Then place in a pre-heated to 450 degree oven for 10 minutes and PRESTO! You’ll have the yummiest Sweet potatoes ever!
