Tomato Rice

A very tasty and quick to prepare dish. Good option for lunch boxes.Ingredients

1. Tomato – 6 or 7 well ripen
2. Big Onion – 5 or 6 chopped lengthwise
3. Green Chili – 4 or 5 slit in the middle
4. Ginger-Garlic paste – 1 tsp (can increase to 2 tsp if you like the smell and taste of it)
5. Few pieces (and not the powder) of garam masala items (like cloves, cardamom, lavang, bay leaf)
6. Turmeric powder little
7. Salt and oil as per need
8. Rice – 3 cups (my one cup rice means 160mm)

Method

1. Keep the pressure cooker on the stove and pour oil
2. Add the garam masala items
3. Add the onion and fry till translucent.
4. Add the ginger garlic paste and fry till the fresh smell evaporates
5. Add the green chili and fry for few secs
6. Add the tomato and curry leaves and fry for one or two minutes.
7. Add the turmeric powder and salt
8. Now add the washed rice and keep the exact measurement of water (I keep 1:2 ratio of water for the rice here. You can keep depending upon the rice you use. No need of excess water, as Tomato is watery. So, you can keep the exact amount of water that you usually keep for the 3 cups of rice)
9. Close the lid and allow to whistle (no. of whistle also do the same as you do for ordinary plain rice cooking)
10. After opening the lid, mix the rice well to make the ingredients to mix equally.
11. Add the chopped coriander leaves on the top

Note: You can add little peas and carrot along with the tomato at step 6. It will make the rice to look more colourful and healthy too.

The whole preparation will hardly take 10 to 15 minutes. It can be done on the previous day night itself. It won’t get spoiled till next day evening / night, even if not kept in fridge
