This is a vegetarian inspired side dish, that will have your family asking for seconds and maybe even thirds. It’s also a really easy recipe to make with preparation and cook time, at only about 45 minutes

Ingredients

  • 2 Tablespoons Corn Oil
  • 1⁄2 Teaspoon Onion Seeds
  • 1 Onion (Sliced)
  • 2 tomatoes (Sliced)
  • 1 Yellow Pepper (Seeded and Chopped)
  • 1 Teaspoon Fresh Root Ginger (Grated)
  • 1 Garlic Clove (Crushed)
  • 1 Teaspoon Chilli Powder

  • 1 1⁄2 Teaspoons Salt
  • 2oz Frozen Peas
  • 14oz Basmati Rice

Preparation

Start of by heating the oil and frying the onion seeds for about 30 seconds and add the onion and fry for about 5 minutes. Next add the tomatoes, pepper, ginger, garlic, chilli powder, coriander, potato, salt and peas, and stir-fry over a medium heat for a further 5 minutes.

Finish the dish by stir-frying the rice for about 1 minute, while pouring in 1 1⁄4pts of water. Bring the mixture to a boil, then reduce the heat to medium. Cover and cook for a further 12–15 minutes. Leave the rice to stand for about 5 minutes, and serve hot.

Sounds good but I wish you had included a picture of the rice dish you are describing instead of the other picture. It’s always good to see what a recipe looks like and not just how to make it.

This sounds really delicious. Having cooked flavored yellow rice for years, I can imagine what the dish may look like when done but by onion seeds, do you mean the ones that you can plant in a seed packet, or where do you get onion seeds from in your recipe, curious?
