Traditional Latkes (Potato Pancakes)
At this time of year, many people celebrate Chanukkah, the Festival of Lights. It is customary in many communities to eat foods fried in oil. Traditional Latkes (Potato Pancakes) are delicious, easily made and can be eaten on any occasion.

Note: If making Traditional Latkes (Potato Pancakes) for Passover, substitute matzo meal for the flour.
Ingredients:
*6 medium potatoes
*1 medium onion
*2 eggs, beaten
*1/2 c AP/plain flour; more as needed
*1 1/2 tsp salt
*oil for frying
Preparation:
Wash and peel the potatoes. Grate or shred into a bowl filled with cold water. Swish the potatoes around and drain well. Place the grated/shredded potatoes in a clean tea towel and wring out as much water as possible.
Peel and grate the onion into a large bowl. Add the potatoes, eggs, flour and salt. Mix well to form a batter. Add more flour if needed; the batter shouldn’t be too thin.
Heat the oil in a heavy frying pan. Try a spoonful of batter to see if it holds together; adjust flour if it doesn’t. Fry tablespoons of batter until crisp and brown on one side. Flip the latkes over and finish frying the second side. Drain well on kitchen paper/paper towels. Serve immediately.
Traditional Latkes (Potato Pancakes) are often served with sour cream or applesauce. They can also accompany a good pot roast.
