Who Said Beans Should be Boring?
Baked beans are liked world wide for their nutritional value and they also go with every meal. Not only that, cooks can also be creative with beans, making salads, stews, etc. Beans are economical and they go a long way. Baked beans are not salted, have are very low in Saturated Fat, Cholesterol and Sodium. They are also a very good source of Dietary Fiber. Just one slice of toast with baked beans in the morning fills you up until lunch time so there’s no chance of you nibbling on chrisps and chocolate before lunch time.They are quick and easy to make using regular ingredients we all have in our fridges.
Ingredients
- I tin of baked beans
- I large onion (finely chopped)
- 4 large table spoons of oil
- 1 teaspoon of garlic (finely chopped)
- 2 teaspoons of salt
- 4 medium sized carrots (grated)
- 5 medium sized hot chillies (finely shopped and seeds removed).
- 1 tablespoon of paprika
- 2 stock cubes
Method
- Heat oil in a pan,
- Reduce heat to medium
- Add finely chopped onions garlic
- Add paprika, salt, and stock
- Stir until almost golden brown
- Add the grated carrots and stir
- Add the finely chopped chillies and stir (strengthen the hotness as desired)
- Simmer for 20 minutes in low heat
- Add a tin of baked bins and stir
- Leave on low heat for 10 minutes
Serves 6
Can be served as a warm or cold side dish
Good on its own, with toast or as a side dish/salad for a barbeque.
